Taquitos!!

I love taquitos and I can eat them every day. So I found an easy recipe that I can make myself and they turned out really good. You should make them. We used flour and corn tortillas but I personally like the corn tortillas the best!

CHICKEN TAQUITOS
1 lb. chicken breast
1/2 onion
1 tsp. garlic (minced)
1 c. finely chopped tomatoes
6 tbsp. chicken broth
2 tsp. flour
1/2 tsp. cumin
1/2 tsp. oregano
1/2 tsp. chili powder
1/2 tsp. salt
Flour tortillas
Shredded lettuce
Cheese
1/2 pkg. taco seasoning
Cut chicken breast in narrow strips. Cook chicken in a little water. Remove excess water. Saute onion and garlic in 1 tablespoon oil 1 or 2 minutes. Stir in chicken, tomatoes, chicken broth, flour, cumin, oregano, chili powder and salt. Add 1/2 package taco seasoning. Mix well. Simmer 3-5 minutes.

Spoon 2 tablespoons of chicken mixture down center. Top with grated cheese of your choice. Fold up little sides and roll, secure with toothpicks. Fry in heavy skillet with oil until golden. Drain on paper towel, keep warm in oven.

I ended up not putting the taco seasoning because I tasted it and didn't think it needed it. Also I put diced red bell peppers in mine and I only put half of the chili powder because I didn't want them very spicy, and I just shredded the chicken because it was easier. I had to microwave the corn tortillas in a damp paper towel for about 30 seconds to make them soft enough to roll. We bought a fryer a while ago and we love it, so I am always looking for new recipes to use our fryer. We actually cooked them for like 3 min and they came out a little too crispy, so only leave them in for about a min or so. You could just fry them in a pan with oil but make sure the oil stays around 350 or else you will burn them, and if it isn't hot enough they will just get soggy. But trust me you will love them!!!

Cambria: I like it, I'm just not quite sure I like the poop in it.

The "poop" was beef. We were having hamburger helper.

Too Bad

It is too bad that our camera died because the dance was about to get really good!


Last Sunday in Primary Cambria was being really funny, but it would have been better if it was someone else's kid. You know, the kid at church or school that is really loud, and you are glad they aren't yours... well this time it was mine. During the prayer that a little girl was saying Cambria said in her very loud I don't know how to whisper voice, "say chiki, chiki milk!" (which is what she calls chocolate milk). I do not know why she was telling the girl to say that. Then during a boy's talk she started crying and asking when it would be her turn. For everyone who knows Cambria, she only has one volume and it is LOUD! She got pretty upset so I told her to come over by me and I explained that someday she will have her turn but not today, and that she needs to sit in her chair and listen to the lesson and be quiet. So then she said "Oh darnit!" and stomped all the way back to her chair. THEN during sharing time she actually went up the stairs behind the poduim and grabbed the microphone and said, "ok it's my turn now!" It was funny and kinda cute but it would have been better if it was someone else's kid acting this way because I had Ashlynn with me and she was crying so I already felt like everyone was staring at me. She really makes me laugh sometimes.

Skiing in Utah

This past weekend we went to Ogden to take Cambria skiing for her first time. She was so good. Even the guy working there was surprised that she was only 3. She was so cute because she wasn't even paying any attention to where she was going most of the time, she was looking up and all around instead of in front of her, and she was humming jungle bells the whole time. It was so funny to watch. The weekend was great until Monday when we were almost all the way up to Powder Mountain and our oil pump in our car broke. We coasted all the way down to a town so that we could call a tow truck. It is a good thing our insurance covered that, but we ended up having to stay in Ogden until last night waiting for our car, which is still broken. They can't figure out what is wrong so Aaron's mom came to get us because Aaron couldn't miss anymore work. The girls were getting cranky, we were our of clean clothes, and we were stressed out about how much it is going to cost to fix our car, but we were grateful that Jaymee let us stay at her house!! To top of our weekend when we got home we didn't have a key to get in our house because it was on our car keys in Ogden, so we had to pay a locksmith $50 to come let us in. The good news is that it is impossible to break into our house!

This was the Dew Tour at Snowbasin. Jaymee works there and so we spent the day there walking around getting free stuff, and watching the men's snowboarding finals. It looks cold but we were all actually sweating because it was such a nice day and so warm!




This was on Saturday. I thought Cambria would be scared but she had no fear going down the mountain! They even took her up the ski lift on a bigger run and she loved it. This girl doesn't even like it when Aaron throws her up in the air and catches her, she is scared of the water when we swim, and she is pretty clumsy, but she loved skiing and is already asking to go again. Maybe we have a future olympian!


I rode the ski bike down the hill. It goes really fast.
The magic carpet takes you back to the top of the bunny hill so that you can go back down again. The place where we went was perfect for Cambria to learn because the hill was small and not too steep. We will have to take her again!

This was Ashlynn's first ride on a ski lift. She seemed to like it. It always kinda makes me nervous when we get on these.

Snow and Stuff

We got so much snow last week. Cambria and I played outside while Aaron was in Utah snowboarding. We got about 4 or 5 inches and then the next day got about 4 more!
It is a good thing Corey decided to stay in El Paso a week longer... Before one of our neighbors shoveled our driveway with his 4 wheeler you could barely see her car.

The piles of snow around our house were as tall as Cambria. She wanted to shovel too.
Every little bit helps, except that she was putting it back on the car!
I forgot to post this a while ago, but Ashlynn has been sitting by herself for a few weeks. She only falls over when she gets distracted. She loves to roll over to the stairs and look down them.
She is getting so big.
Someone got some play dough for Christmas, and no it wasn't the big kid on the left.


The first video is of Cambria in her dance class. She loves it and she looks so cute. There is a future rock star in the second video... and a baby almost crawling in the last one.
